Flake the sturgeon into food processor and pulse lightly until no large chunks remain. Transfer sturgeon into a mixing bowl and mix with mayonnaise, crème fraîche, chives, zested lemon and lemon juice. Once everything is mixed add pepper and salt to taste.
Divide the sturgeon mixture between six bowls. Place a small quenelle of caviar on top of each portion. (Add more if caviar if you’re feeling festive!)
Garnish with a cucumber ball and chive sprig.
